Botanical Infusion Kit for Gin

Kit Does Not Include (but requires):


  • 200ml gin

 

Important Info:

  • Don't let potions become poisons! Do not leave your infusion steeping for more than 3 days.

  • Ensure all dried ingredients are strained from the liquid using the filter provided, before returning the strained infused gin to the engraved glass bottle.

  • Citric acid can be substituted with lemon juice for future potion-making.

 

Using this kit:

This kit contains ingredients to create two different infused gins. Select which infusion & pairing cocktail appeals to your tastes, and follow the relevant infusion recipe. You have enough ingredients in your kit to try both infusions, but you will need to 200ml of gin for each infusion and an extra glass bottle with a stopper to store it if you're an impatient wiz and making them both simultaneously!


Infusion 1: Hibiscus & Elderflower Infused Gin


Time: 10 minutes (plus 48 hours for the gin to infuse)

Difficulty: Beginner Wiz

 

You will need:

  • 200ml gin

  • 1/2 jar of Hibiscus (2g)

  • 1/2 jar of elderflower (0.4g)

  • Funnel

  • 200ml engraved glass bottle with stopper

 

Method:

1. Using the funnel provided, add half the jar of hibiscus (2g) and half the jar of elderflower (0.4g) into the glass bottle.

2. Fill the glass bottle with a quality London dry gin (approx. 200ml).

3. Place the stopper in the bottle, shake for a few seconds then leave to infuse at room temperature, away from direct sunlight for 48 hours.

4. After 48 hours, place one of the filters in the top of a jug and pour your infused gin mixture slowly into the filter allowing the liquid to seep through. This step will strain the solid ingredients from the mixture. The solids should be discarded and the glass bottle rinsed clean. Use the funnel to decant the infused gin back into the glass bottle.



Pairing Cocktail 1: Hibiscus & Elderflower Tom Collins

Time: 5 minutes

Difficulty: Beginner Wiz

 

You will need:

  • 50ml Hibiscus & Elderflower Infused Gin (Infusion 1)

  • 25ml Lemon juice

  • 20ml Sugar syrup (1:1 ratio sugar to water mix)

  • Soda water (approx. 100ml, to top up)

  • Lemon or lime wedge (to garnish)

  • 1 tall chilled glass

  • 1 stirrer

  • Ice

 

Method:

1. Add 50ml of Hibiscus & Elderflower infused Gin into a tall glass, with 25ml lemon juice and 20ml sugar syrup and top up with ice.

2. Top up with soda water, stir and garnish with fresh Lemon or lime wedge. Replace soda water with Tonic water for a refreshing bitter variation!


 

Pairing Cocktail 2: Pink Lady

Time: 5 minutes

Difficulty: Intermediate Wiz

 

You will need:

  • 50ml Hibiscus & Elderflower Infused Gin (Infusion 1)

  • 25ml Lemon Juice

  • 15ml Cointreau

  • 15ml Sugar (omit for a less sweet version)

  • 1 Egg White (this can be substituted with 25ml of Aquafaba for a vegan-friendly option)

  • Cocktail shaker/jar with secure lid

  • Strainer

  • Ice

  • Serving Glass (we recommend a coupe)

 

Method:

1. Add all your ingredients into a shaker/jar, add ice and shake for approximately 30 seconds.

2. Strain your drink and discard the ice. Add your drink into the shaker/jar and shake again without ice for another 30 seconds.

3. Strain into a cocktail glass/coupe.



Infusion 2: Lavender & Butterfly Pea Flower Tea Infused Gin

 

Time: 10 minutes (plus 48 hours for the gin to infuse)

Difficulty: Beginner Wiz


You will need:

  • 200ml gin

  • 1/2 jar of lavender (0.5G)

  • 1/2 jar of Butterfly Pea Flower Tea (1g)

  • 200ml engraved glass bottle with stopper

 

Method:

1. Using the funnel provided, add half of the jar of lavender and half of the jar of butterfly pea flower tea into the glass bottle.

2. Fill the glass bottle with a quality London dry gin (approx. 200ml).

3. Place the stopper in the bottle, shake for a few seconds then leave to infuse at room temperature, away from direct sunlight for 48 hours.

4. After 48 hours, place one of the filters in the top of a jug and pour your infused gin mixture slowly into the filter allowing the liquid to seep through. This step will strain the solid ingredients from the mixture. The lavender and Butterfly Pea Flower Tea should be discarded and the glass bottle rinsed clean. Use the funnel to decant the infused gin back into the glass bottle.


Pairing Cocktail 1: Butterfly Pea Flower & Lavender G&T

Time: 5 minutes

Difficulty: Beginner Wiz

You will need:

  • 50ml Butterfly Pea Flower & Lavender Infused Gin (Infusion 2)

  • Tonic water (approx. 100ml, to top up)

  • Ice

  • Stirrer

  • Tall serving glass

Method:

1. Add 50ml of Butterfly Pea Flower & Lavender infused Gin into a tall glass and add ice.

2. Top up with fresh Tonic water and stir.


 

Pairing Cocktail 2: Transfiguration Toniq

Time: 10 minutes

Difficulty: Intermediate Wiz

You will need:

  • 50ml Butterfly Pea Flower & Lavender Infused Gin (Infusion 2)

  • 15ml Agave syrup or honey

  • 10ml cold water

  • Citric Acid solution (4g per 100ml)

  • Ice

  • Mixing jug

  • Mixing glass (e.g. a basic tumbler)

  • Serving glass (we recommend a coupe)

 

Method:

1. Prepare your Citric acid solution by dissolving 4g into 100ml of water. Stir for a couple of minutes until almost all acid crystals have dissolved. Set this mixture to one side.

2. Add 50ml Butterfly Pea Flower & Lavender infused Gin, 15ml Agave syrup, and 10ml water* to a mixing glass. Add ice and stir continuously for a minimum of 30 seconds.

3. Strain into a coupe glass. Add 35ml Citric Acid Solution to the drink (pour anticlockwise to avoid unfavourable transfigurations!) and observe the magical colour change!

*If you have good quality ice that does not melt easily, you will need to add 10ml water. More commonly you will have low quality or small ice cubes, so the dilution provided by these should be sufficient and you can omit the water.
