Head Manager- Pub and Restaurant

Our Head Experience Manager will be a core part of The Cauldron’s London team and be integral in the everyday workings of the cocktail experience classes. She or he will provide hands-on support, and work closely with the other cocktail experience team members and report directly to our COO.
The ideal candidate not only has the industry experience in the pub and restaurant industry, but is creative, collaborative, and tenacious. Growth mindset is a must.
Culinary Creativity: Follows culinary trends and, is able to translate ideas into unique menu and recipe programs that advance the culinary experience and food tech vision for the Cauldron. Can consult with executive team to create and execute culinary strategies and menu.
Leadership: Ability to effectively manage and communicate with Culinary Staff, Key Personnel, Management Teams. Has a passion for excellence and can effectively advise the Cauldron’s leadership on industry best practices and regulations. Highly engaged and extremely hands-on in preparing the pub for opening and in day-to-day operations. You will offer strong leadership, including supervision, direction and training, to a diverse team of employees.
Training: Should be able to articulate and demonstrate a wide ranging variety of cooking techniques and skills for the catering staff (plate presentation, quality, safety, proper culinary techniques). Hands-on with hiring, training, and developing the head chef, restaurant, and pub staff members.
Every-day operations: Maintains all pub equipment (bars, kegerators, pumps, etc.) and keeps accurate inventory of alcohol and food items. Properly scheduled bartenders and barbacks, and monitors bar speed of service during events. Coaches bartenders as needed. Keeps alcohol in safe, clean, and organized storage areas, and ensures that pub is clean and tidy.
Financial: Ability to manage and demonstrate proven results with food costs, labor and controllable expenses. Good with data and Excel.
5+ years experience in managing and operating a pub and restaurant
Strong background in culinary operations, systems, process improvement, human resource management, and organizational skills
Strong knowledge in food safety and sanitation
In-depth knowledge of the restaurant and pub industry in London
Must be able to work a flexible schedule
Position will require occasional international travel and active involvement in leading drink-based Magical Hackathons
- 10+ years industry experience
- Has worked as a bartender for a number of years and has extensive understanding of bar equipment
- Proficiency with Excel or Sheets, Xero or QuickBooks
- Has an aptitude for learning and using new software needed for job
- Can pour a proper pint of Guinness
- Has extensive knowledge of wine
- Has extensive knowledge of spirits, especially whiskey and gin
- Has extensive knowledge of craft beer
- A creative and imaginative problem-solver
